Phoebus High School culinary team advances to national HUNCH competition


Congratulations to the culinary team at Phoebus High School as they advance to the National HUNCH Culinary Challenge at the Johnson Space Center in Houston, TX on April 20, 2023. The team won the preliminary challenge held at NASA Langley. The culinary team is a part of the Academy of Hospitality and Tourism.


This year’s required dish is an ethnic soup or stew. The students decided to create a stew blending African and Indian flavors called Seafood Lentil Stew. The Culinary Challenge is broken down into three required sections. Each of these is an important part of the program. These sections are the final paper, video, and entrée (food prep, recipe meeting astronaut nutritional standards). The soup/stew must meet the following criteria:


Calories – 150-350
Fat – 10 grams or less
Saturated Fat – 3 grams or less
Sodium – 250 mg or less
Dietary Fiber – 2 grams or more
Sugar – 8 grams or less


In addition, menu items may not contain raw fish or shellfish, uncooked meats, raw eggs or egg whites, or alcohol such as cooking wine, brandy, etc.


“I couldn't be more proud of our young students,” said PHS culinary instructor and chef Travis Walker. “They have taken on yet another challenge and executed it sensationally. This was my first year competing with all new culinary students and they looked like veterans. All I could do was stand back and watch my students do what they do best, represent and show what it takes to be a Phantom!!”

The PHS culinary team won the national HUNCH competition in 2019 and their dish, Harvest Hash, was fed to the astronauts on the International Space Station.
